Recipe: Flank Steak with Wasabi Noodles and Greens Chef: Matt Eversman Ingredients: 6 oz trimmed flank steak 2 Thai chilies, minced 1 clove garlic, minced 2 tsp sugar 1 tbls veg oil ¼ c sake 2 tbls mirin 1 tbls soy sauce 3 tbls butter 3 oz rice noodles 1 tsp wasabi powder 1 tsp toasted sesame seeds 1 peach, diced 1 tbls honey 1 tbls rice wine vinegar 1 tsp ginger, grated 3 tbls oil 3 oz baby mustard greens 1 tbls peanuts, chopped Method (flank steak): To make the rub for the flank steak, combine Thai chilies, garlic, sugar and oil and work into a paste. Rub the whole piece of flank steak with the mixture and allow it to marinate for about an hour. After an hour has passed, preheat a medium sauté pan over medium high heat. Once the pan is preheated add about 2 tbls of oil, the oil should just start to smoke. Add the flank steak to the pan and allow it to sear, without moving, for about 4 minutes or until the steak starts to take on a nice deep brown color.
